Eccles Cake

Eccles cake is a popular British pastry consisting of currants, sultanas, and peel, mixed with flour, butter, eggs, and sugar. It is widely available in the UK and Ireland. The Eccles cake was first mentioned in the mid-19th century when it was served at the annual feast of St Peter’s Church in Eccles. The original recipe used currants and raisins soaked in rum.
