- 1 1/4 cups blue or yellow cornmeal
- 1 cup Gold Medal™ all-purpose flour
- 1/4 cup vegetable oil
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 cups buttermilk
To begin, preheat your oven to 450°F. Prepare 14 medium muffin cups by greasing the bottoms or using paper baking cups. In a large bowl, combine all the ingredients and beat vigorously for 30 seconds. Now, fill each muffin cup until it's 7/8 full.
Bake until light golden brown, typically 20-25 minutes, then promptly remove from the pan and serve while still warm.
