  • ½ cup vegetable oil
  • 1 cup pureed cooked beets
  • 1 cup buttermilk
  • 1 ½ cups white sugar
  • 2 teaspoons baking powder
  • 3 cups all-purpose flour
  • 2 eggs
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions
 

  • Before baking a delicious cake, preheat your oven to a temperature of 350 degrees Fahrenheit or 175 degrees Celsius. To prepare the cake pan, line a 9x13-inch baking dish with parchment paper for easy removal of the cake.
  • To make the cake batter, begin by sifting together the flour and baking powder in a large mixing bowl. In a separate large bowl, whisk together the sugar, buttermilk, beets, oil, eggs, cocoa powder, red food coloring, vanilla extract, vinegar, baking soda, and salt until the ingredients are thoroughly combined.
  • Slowly add the flour mixture to the wet ingredients in the large mixing bowl, stirring gently after each addition until the ingredients are fully incorporated. Once the cake batter is smooth, pour it into the prepared pan. Use a firm tap on the pan to help settle the batter and release any large air bubbles.
  • Now it's time to bake your cake! Place the cake pan in the preheated oven and allow it to bake for approximately 35 minutes. Check if the cake is done by inserting a toothpick into the center of the cake. If the toothpick comes out clean, the cake is fully cooked and ready to enjoy.
