Ingredients
  

  • 1 tablespoon baking powder
  • ½ cup chopped walnuts
  • 1 cup flaked coconut
  • 1 ½ cups white sugar
  • 2 cups gluten-free flour
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1 teaspoon salt
  • 1 cup coconut milk
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).Grease and flour a 9x13-inch baking dish.
  • In a large bowl, whisk together the flour, sugar, coconut, walnuts, baking powder, baking soda, xanthan gum, and salt.
  • Pour the batter into the prepared baking dish.Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
