Ingredients
  

  • 12 egg whites
  • 3 (1 ounce) squares semisweet chocolate
  • 1 ½ cups white sugar
  • ¼ cup unsweetened cocoa powder
  • ¾ cup cake flour
  • 1 teaspoon cream of tartar
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • 1 ½ teaspoons lemon juice
  • confectioners' sugar for dusting

Instructions
 

  • Preheat the oven to 325°F (165°C). Line a 9-inch tube pan with parchment paper if it does not have a removable bottom.
  • In a large bowl, beat the egg whites with an electric mixer set at low speed until they become foamy.
  • Gradually mix in the remaining 3/4 cup of sugar and beat until stiff peaks form. Stir in the vanilla extract and lemon juice.
  • Gently fold the flour mixture into the beaten egg whites. Then fold in the grated chocolate, making sure not to leave any white streaks.
