For the cake:
- 15.25 ounce box dark chocolate cake mix, plus ingredients needed to make cake: eggs, oil and water
- 3.4 ounce box instant pistachio pudding
- 1 ½ cups milk
- ½ cup Baileys Irish Cream
For the topping:
- 1 ¾ cup heavy whipping cream
- ¼ cup Baileys Irish cream
- ⅓ cup powdered sugar
- ¼ cup chocolate, shaved
- ¼ pistachio nuts, finely chopped
Preheat oven to 350°F.
Grease a 9x13 baking pan.
Mix cake ingredients per package instructions (eggs, water, and oil), then pour into the prepared pan.
Bake for 30-35 minutes, then let it cool for 10 minutes.
Use a wooden spoon to poke about 80 holes evenly in the cake (8 rows, 10 columns).
Whisk pudding mix, milk, and Baileys in a small bowl.
Pour the pudding mix into the cake holes and refrigerate for at least 2 hours.
For the whipped topping, beat heavy cream in a medium bowl. Add Baileys and powdered sugar until stiff peaks form.
Spread whipped cream on the cooled cake, and garnish with chocolate shavings and finely chopped pistachios (grate chocolate with a cheese grater).
Slice into squares and serve.
