- 1 C Fine Semolina 160 g
- 2 C Fresh Finely Grated Coconut - lightly Packed 160 g
- 3/4 C Fine Sugar 170 g
- 2 Eggs Large
- 2 Tsp Baking Powder
- 1/4 C Coconut Oil or Butter
- 1/2 C Milk/Coconut Milk
- 1/2 Tsp Salt
- 1 Tsp Vanilla essence
Prior to making the batter, let all ingredients reach room temperature. Prep your 8" x 8" square cake pan by greasing it or lining it with parchment paper for easy baking.
Combine semolina, baking powder, and coconut thoroughly.
Incorporate half of the dry mixture into the eggs, followed by half of the coconut milk/milk. Stir until well combined. Add the remaining dry mix. If the batter appears too dry, include the remaining liquid. Aim for a dropping-consistency batter, not too runny.
Pour the batter into the baking pan and ensure it's level.
Seal with a lid and refrigerate for 6 hours to overnight for best results.
