Ingredients
  

  • 1 C Fine Semolina 160 g
  • 2 C Fresh Finely Grated Coconut - lightly Packed 160 g
  • 3/4 C Fine Sugar 170 g
  • 2 Eggs  Large
  • 2 Tsp Baking Powder
  • 1/4 C Coconut Oil or Butter
  • 1/2  C Milk/Coconut Milk
  • 1/2 Tsp Salt
  • 1 Tsp  Vanilla essence

Instructions
 

  • Prior to making the batter, let all ingredients reach room temperature. Prep your 8" x 8" square cake pan by greasing it or lining it with parchment paper for easy baking.
  • Combine semolina, baking powder, and coconut thoroughly.
  • Incorporate half of the dry mixture into the eggs, followed by half of the coconut milk/milk. Stir until well combined. Add the remaining dry mix. If the batter appears too dry, include the remaining liquid. Aim for a dropping-consistency batter, not too runny.
  • Pour the batter into the baking pan and ensure it's level.
  • Seal with a lid and refrigerate for 6 hours to overnight for best results.
