- 5 sprigs of fresh
- 1 & 1/2 cups caster sugar
- 2 fresh oranges
- 3 cups ground almonds
- 1 tsp baking powder

- 1/2 cup sliced almonds
- 1 tbsp icing sugar
- zest of 1 1 orange
Blend fresh lavender and caster sugar until the lavender becomes fine granules.
Boil whole oranges in water for an hour until soft; then puree them with their skins in a food processor. Set aside.
Preheat oven to 180°C and line a cake tin with baking paper.
Cream butter and lavender sugar in a large bowl until fluffy. Add orange puree and eggs; beat for 1 minute. Gently fold in ground almonds and baking powder. Pour into the lined cake tin, sprinkle sliced almonds on top, and bake for 1 hour or until fully cooked.
After cooling for 15 minutes, turn out the cake, and garnish with icing sugar and orange zest to serve.
