- ½ cup coconut sugar
- ½ cup all-purpose flour (or gluten free flour)
- ½ cup shredded coconut (unsweetened)
- ¼ cup almond flour
- 4 egg whites (room temperature)
- ½ cup banana (mashed)
- 1 mango (peeled & chopped)
- 3 passion fruit
Preheat oven to 350°F and grease muffin pans.
In a mixing bowl, combine sugar, flour, almonds, and coconut.
Mix in egg whites, then add mashed banana, stirring thoroughly.
Fill muffin pans about 3/4 full with the mixture.
Press mango pieces into each tin.
Top with passion fruit pulp and seeds.
Bake for 20-25 minutes until golden. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
