Ingredients
  

  • ½ cup coconut sugar
  • ½ cup all-purpose flour (or gluten free flour)
  • ½ cup shredded coconut (unsweetened)
  • ¼ cup almond flour
  • 4 egg whites (room temperature)
  • ½ cup banana (mashed)
  • 1 mango (peeled & chopped)
  • 3 passion fruit

Instructions
 

  • Preheat oven to 350°F and grease muffin pans.
  • In a mixing bowl, combine sugar, flour, almonds, and coconut.
  • Mix in egg whites, then add mashed banana, stirring thoroughly.
  • Fill muffin pans about 3/4 full with the mixture.
  • Press mango pieces into each tin.
  • Top with passion fruit pulp and seeds.
  • Bake for 20-25 minutes until golden. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
