Ingredients

  • Butter for greasing pan
  • 3 cups all-purpose flour, plus more for dusting pan
  • 1 1/2 cups vegetable oil
  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 3 cups peeled, cored, and thickly sliced tart apples like Honeycrisp or Granny Smith
  • 1 cup chopped walnuts
  • 1 cup raisins
  • Vanilla ice cream or whipped cream (optional)

Instructions

  • Start by preheating the oven to 350°F and greasing a 9-inch tube pan with butter and flour. Assemble the remaining ingredients and, using a mixer with a paddle attachment, blend the oil and sugar. After approximately 5 minutes, introduce the eggs and continue beating until the mixture achieves a creamy consistency.
  • Blend 3 cups of flour with salt, cinnamon, and baking soda; incorporate into the batter. Finally, introduce vanilla, apples, walnuts, and raisins, stirring until well-combined.
  • Transfer the mixture into the prepared pan, then bake for 1 hour and 15 minutes until a toothpick inserted in the center comes out clean. Afterward, allow it to cool in the pan before serving at room temperature with vanilla ice cream or whipped cream, if desired.
