Ingredients
  

Coconut, lime and passionfruit syrup cakes

  • 1 cup self-raising flour, sifted
  • 1 cup desiccated coconut
  • 1 cup caster sugar
  • 125 gram butter, melted
  • 1/2 cup milk
  • 2 eggs, lightly beaten
  • 2 passionfruit, pulp
  • 2 tablespoon lime , finely grated zest
  • thickened cream, to serve

Lime and passionfruit syrup

  • 1 cup water
  • 3/4 cup caster sugar
  • 4 passionfruit, pulp
  • 1/3 cup lime juice
  • 1 tablespoon finely grated lime zest

Instructions
 

  • Preheat your oven to 180°C for optimal results.
  • In a spacious bowl, mix together flour, coconut, sugar, butter, milk, eggs, passionfruit pulp, and zest until well combined.
  • After pouring the mixture into the prepared recesses, bake it for 15-20 minutes or until it turns golden and a skewer comes out clean when tested. Then, transfer it to a wire rack with the top side facing up.
  • Enhance your dessert experience by serving cakes drizzled with syrup and accompanied by cream.
  • In the meantime, in a small saucepan, combine the oil ingredients. Stir them over low heat until the sugar dissolves, then bring the mixture to a boil on high.
  • Simmer on medium heat for 5-10 minutes until it thickens slightly.
