Coconut, lime and passionfruit syrup cakes
- 1 cup self-raising flour, sifted
- 1 cup desiccated coconut
- 1 cup caster sugar
- 125 gram butter, melted
- 1/2 cup milk
- 2 eggs, lightly beaten
- 2 passionfruit, pulp
- 2 tablespoon lime , finely grated zest
- thickened cream, to serve
Lime and passionfruit syrup
- 1 cup water
- 3/4 cup caster sugar
- 4 passionfruit, pulp
- 1/3 cup lime juice
- 1 tablespoon finely grated lime zest
Preheat your oven to 180°C for optimal results.
In a spacious bowl, mix together flour, coconut, sugar, butter, milk, eggs, passionfruit pulp, and zest until well combined.
After pouring the mixture into the prepared recesses, bake it for 15-20 minutes or until it turns golden and a skewer comes out clean when tested. Then, transfer it to a wire rack with the top side facing up.
Enhance your dessert experience by serving cakes drizzled with syrup and accompanied by cream.
In the meantime, in a small saucepan, combine the oil ingredients. Stir them over low heat until the sugar dissolves, then bring the mixture to a boil on high.
