Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 cup cooking oil
  • 4 eggs
  • 3 large carrots, peeled and thinly sliced
  • 1 tablespoon baking powder
  • 2 tablespoons butter or margarine
  • 1 cup white sugar
  • 1 cup instant hot chocolate mix
  • ¾ cup milk

Instructions
 

  • Set your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13 inch baking dish. This will ensure that the cake does not stick to the pan and bakes evenly.
  • Place the chopped carrots, eggs, and oil in a blender or food processor. Blend until the carrots are finely chopped. Pour the mixture into a mixing bowl.
  • Stir in 2 cups of sugar until well blended. Next, add in the flour and baking powder and mix until everything is well combined.
  • Pour the batter into the prepared baking dish and smooth out the top.Bake in the preheated oven for 40 minutes or until the top springs back when lightly touched.
