- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 12 tablespoons butter (room temperature)
- 3/4 cup sugar
- 1/3 cup honey
- 2 teaspoons vanilla flavoring
- 2 eggs (room temp)
- 3/4 cup milk (room temperature)
Honey Glaze
- 1 cup powdered sugar
- 2 tablespoons honey
- 1 tablespoon milk
Preheat your oven to 350°F. Grease a 9" x 5" loaf pan (325°F for non-stick pans).
In a small bowl, sift and combine flour, baking powder, and salt.
Using a stand mixer or handheld mixer with a paddle attachment, blend soft butter, sugar, honey, and vanilla at low speed. Increase the speed until fluffy (several minutes). Remember to scrape the sides of the bowl and add eggs one by one.
Add the flour mixture in three parts, alternating with milk (start and finish with flour). Mix until just combined.
Spread the batter evenly in your prepared pan using a spatula. Bake in the center of the oven for 40-55 minutes, until the cake is firm on top and a toothpick comes out mostly clean.
Allow the cake to cool in the pan on a wire rack, then remove. Enjoy as is or glaze with honey.
